How It All Began The idea for Coscakes took root during a family trip to Japan. While exploring the vibrant street food scene and embracing the year-round anime culture, Chris’s daughter, Scarlett, suggested a business idea that would bring this magical atmosphere back to their hometown. Combining her love for cosplay ("cos") with the family’s passion for baked goods ("cakes"), the concept was born. Chris, co-owner and CFO, leaned on his background in product management to test the waters. The family began by selling taiyaki (fish-shaped waffles filled with sweet or savory fillings, such as soft-serve ice cream) and other treats at local farmers markets. The overwhelming response convinced them to open their brick-and-mortar bakery. And no, they don’t taste like fish! A One-of-a-Kind Experience Coscakes is not your average bakery. Step inside, and you’ll find a whimsical space adorned with monthly-rotating anime themes and decor. Customers are encouraged to embrace their inner cosplayer while indulging in fresh-made taiyaki, ice cream, and pastries. Chris emphasizes the importance of authenticity. All recipes are made from scratch, including their red bean paste, a staple in Asian desserts. This commitment to quality and detail is one of the things that sets Coscakes apart from competitors. Another is the unique fantasy world customers will enjoy as soon as they step inside. This venue doesn’t stick strictly with Anime… they also delve into American characters from various comics franchises. Chris and crew change up the theme every month, dress up according to the theme, and give discounts to those who come dressed according to the monthly theme. Supporting a Greater Cause The Beltran family’s dedication extends beyond tasty treats and anime themes. Inspired by personal experiences, including Chris’s former wife’s battle with cancer, Coscakes actively supports cancer-related causes. From Breast Cancer Awareness Month to local organizations, the bakery weaves philanthropy into its mission. In another philanthropic expression, all leftover food is donated to homeless shelters at the end of every business day. Why Beaverton? Chris and his family chose Beaverton for its growing diversity and vibrant local scene. Furthermore, Coscakes helps address the dearth of eateries and snack shops on the west side of greater Portland. “Now we don’t have to go across the river into downtown to get a fun dessert,” says a local. The team is also considering a catchy tagline to encapsulate their vision—“Sweets with an unforgettable experience” is a strong contender. And all the friends they made at farmers markets?
